Bacon Hash Brown Bake

2.24 Points Per Serving

 

4 cups potatoes  or hashbrowns-- grated cooked

8 strips bacon -- cooked and crumbled

1/2 cup skim milk

1/3 cup chopped onion

1/2 teaspoon salt

1/4 teaspoon pepper

1/4 teaspoon garlic powder

1 tablespoon reduced-calorie margarine -- melted

1/2 teaspoon paprika optional

 

In a bowl, combine the first seven ingredients. Transfer to a greased 9-inch pie plate. Drizzle with margarine; sprinkle with paprika. Bake at 350º for 35-45 minutes or until lightly browned.

Makes 6 servings.

Sausage Breakfast Casserole

3 Points per Serving

 

3 cups (1 inch) cubed French Bread low fat

Cooking Spray

1/2 pound bulk turkey sausage (such as Louis Rich)

1/4 cup chopped green onions (about 4 green onions)

3/4 cup (3oz) sredded reduced-fat or fat free sharp cheddar cheese

1 cup fat-free milk

1 cup egg substitute

1/2 tsp dry mustard

1/4 tsp salt

1/4 tsp pepper

 

Arrange bread cubes in an 11x7x1 1/2 inch baking dish coated withcooking spray. Coat a large nonstick skillet with cooking spray; place skillet over med-high heat until hot. Add sausage and green onions; cook until sausage is browned, stirring until it crumbles. Drain, if neccesary. Layer sausage mixture and cheese over bread cubes. Combine milk and remaining 4 ingreds.; pour over bread mixture, bread and cheese. Press down on bread mixture with a spatula to cover totally with milk mixture. Cover and chill 8 hours or overnight. Bake casserole, uncovered, at 350º for 30 mins or until set and lightly browned. Let stand 5 mins before serving.

Yields: 6 servings

Mexican "Fried" Ice Cream
Makes 6 servings
One Serving: 4 Points!:)
Ingredients
Three (6 inch) Fat Free or Low Fat Flour Tortillas
Pam cooking spray
Cinnamon (mixed with splenda or equal)
Low fat vanilla ice cream
six cherries (optional)
Heat oven to 325 degrees.
Coat both sides of the three flour tortillas with cooking spray. Sprinkle both sides with a total of 2 tbsp cinnamon -sugar.
Cut each tortilla into 4 wedges. Line baking sheet with aluminum foil. Place tortilla wedges on to foil.
Bake in 325 oven about 20 minutes or until crisp, turning wedges over half way through baking.
To serve: spoon 1/2 cup low fat vanilla ice cream in to each of 6 serving dishes.
Finely crush half of tortilla crisps; sprinkle over ice cream.
Serve each with 2 additional crisp wedges and cherry on top.

2 Point Amaretto Chocolate Cheesecake

3 boards of grahm cracker squares
1/3 cup low fat (skim) ricotta cheese
4 oz whipped cream cheese
1/2 cup sugar
1/4 cup unsweetened cocoa powder
1 egg
3 tbls flour
2 tbls Amaretto liquor or 1 tsp Almond extract
1 tsp vanilla extract
2 tbls semi sweet chocolate chips - ground

Preheat oven to 300 F.  Spray 8" round pie pan with oil spray.

Crumble (fine) grahm crackers evenly at bottom of pan.

Puree or blend  ricotta cheese, cream cheese, cocoa, egg, sugar, flour, liquor and/or extract.

Stir in chocolate chips and pour mixture over grahm cracker crumbs.

Bake for 90 minutes at 300 F..  Cool and cut into 12 servings.

Each serving is 2 points.

Bean Burrito

Preheat oven to 375 and wrap 4 flour tortilla (reg. 6 inch size) in foil and bake 10 minutes to heat.

In skillet:

1 tsp. olive oil
1 clove garlic, chopped
½ cup chopped onion
½ cup chopped green pepper
8 oz can (drained) black beans
½ cup chunky style tomatoes for chili
1 tsp. fresh cilantro, chopped

Cook until liquid is reduced

¼ mixture across tortilla.  Fold over sides and fold up ends.  Seam down on plate.  Cover with fresh salsa.

Parmesan Dijon Chicken

Coat lightly 2 skinless and boneless chicken breasts with Dijon mustard.

On a sheet of wax paper, combine:

1/4 cup corn flake crumbs or corn meal
1 tbls grated Parmesan cheese
1/2 tsp. Italian seasoning
salt and pepper to taste

Press each chicken breast into mixture - both sides.  Shake off excess.

In a non-stick pan, well sprayed with cooking oil:

2 tsp. olive oil
2 cloves of minced garlic

Add:

chicken breast and brown (approx. 4 minutes, each side).

Serves 25 points each breast

Chocolate Cream Pie from Weight Watchers' Favorite Recipes (1993)


In a bowl combine:

1/4 cup smooth Peanut Butter
1 tbls plus 1 tsp. Honey
2 cups Rice Cereal

Spray 9 inch pie plate and press mixture into plate.  Freeze 1/2 hour.

Prepare 1 envelope (serves 4) sugar free Chocolate Pudding Mix according to directions.  Allow to cool.  Pour into pie plate.  Refrigerate for 2 hours.

Serves 83 points each

Oven Fried Sesame Chicken (Cooking Light Magazine - Dec 1993)

4 chicken breasts (3 oz each)
2 tbls. Soy sauce

Place soy sauce in shallow dish, add chicken turning once to coat.  Remove chicken and discard soy sauce.

In a large zip lock bag, add:

3 tbls sesame seeds
3 tbls flour
1/4 tsp. salt
1/4 tsp. pepper

Add chicken and shake until coated.

Place chicken in a baking dish, well sprayed with cooking oil.

Place 1 tsp. whipped butter on each chicken breast and bake at 400 for 30 minutes, or until done.

Serves 4 (one breast each)4 points

Sensational Fish from Weight Watchers' Home Style Recipes (1993)


Preheat oven to 350.  On a well sprayed baking sheet:

2 large Flounder Fillets (or any firm, white, fish fillet)

Divide the following ingredients and top fish fillets with:

1 sliced Tomato
2 sliced Scallions
2 tbls Italian Style Bread Crumbs
2 tsp. Grated Parmesan Cheese
2 tsp. fresh Lemon Juice
2 tsp. whipped Butter

Bake until fish flakes easily, approximately 10-12 minutes.

Serves 26 points each

Broccoli Cheese Soup

Steam or microwave cook 4 cups of broccoli florets.
Place in blender along with 1/2 cup chicken.  Puree in the blender.

In a sauce pan, boil 2 cups chicken broth.
Add  puree of broccoli.
simmer
Add 1/4 cup milk
1/4 tsp. pepper
Add 1/2 cup shredded extra sharp cheese (real.  No-fat  and Low-Fat won't
work).
stir until cheese melts

Serves 2 4 points per serving.

Stuffed Chicken Breasts


Split with knife to form pockets in:

4 skinless and boneless Chicken Breasts

Prepare mixture of:

1 box of thawed and well drained frozen Spinach
1 clove minced Garlic
Salt and Pepper to taste

Microwave the mixture for 5 minutes on high.

Add to mixture:

1 slice Ham sliced into strips
1/8 tsp. Thyme

Stuff chicken pockets with mixture and hold together with toothpicks.
In a well sprayed skillet, add:

1 tbls plus 1 tsp. Olive Oil

Sauté chicken breasts for 4-5 minutes on each side over medium-high heat.

Add ½ cup White Wine, simmer on low heat and cover for 20 minutes.  Turn occasionally.

Place chicken breasts on serving platter and spoon over juices prior to serving.

Serves 45 points each

Crisp-and-Spicy Cheese Twists

1/4 cup grated Parmesan cheese
1 tsp paprika
1/8 tps ground red pepper
1 (10 ounce) can refrigerated pizza crust dough
Butter flavored cooking spray

Preheat oven to 425 degrees.  Combine first 3 ingredients in a small bowl; stir well, and set aside.

Unroll pizza dough, and roll into a 12 x 8 inch rectangle.  Lightly coat surface of dough with cooking spray, and sprinkle with 2 tsp cheese mixture.  Fold dough in half to form an 8 x 6 inch rectangle.  Roll dough into a 12 x 8 inch rectangle.  Lightly coat surface of dough with cooking spray, and spinkle with remaining cheese mixture.  Using fingertips, press cheese mixture into dough.

Cut dough into 16 (8 inch long) strips.  Gently pick up both ends of each strip, and twist dough.  Place twisted dough strips 1/2 inch apart on a large baking sheet coated with cooking spray.

Bake at 425 degrees for 8 minutes or until light browned.  Remove twists from pan, and let cool on wire racks.  Makes 16 breadsticks.
